Sukuma Wiki (Kenyan Collard Greens)

Every Kenyan household has their version of Sukuma Wiki — from plain weekday styles to Sunday-best with beef or eggs. The name literally means ‘stretch the week,’ and for good reason: it’s budget-friendly, flavorful, and perfect with anything on the side.

Ingredients
  

  • 1 bunch sukuma wiki collard greens, chopped
  • 1 medium onion sliced
  • 2 ripe tomatoes chopped
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon Royco or curry powder optional
  • 1 green chili optional

Method
 

  1. Heat oil in a large sufuria or skillet over medium heat.
  2. Add onions and sauté until soft and slightly golden.
  3. Add tomatoes and cook until they break down into a thick sauce.
  4. Add the sukuma wiki and stir well to coat in the tomato-onion base.
  5. Add salt and optional curry powder or chili. Stir and cover.
  6. Let it cook for 5–10 minutes, stirring occasionally, until the greens are tender but still vibrant.
  7. Remove from heat and serve warm.

Notes

- Do not overcook — you want the sukuma to retain some crunch and its bright green color.
- Add pre-cooked beef, minced meat, or eggs if desired for a more filling version.
- Serve with ugali, rice, or chapati.
