
Sukuma Wiki (Kenyan Collard Greens)
Every Kenyan household has their version of Sukuma Wiki — from plain weekday styles to Sunday-best with beef or eggs. The name literally means ‘stretch the week,’ and for good reason: it’s budget-friendly, flavorful, and perfect with anything on the side.

Method
- Heat oil in a large sufuria or skillet over medium heat.
- Add onions and sauté until soft and slightly golden.
- Add tomatoes and cook until they break down into a thick sauce.
- Add the sukuma wiki and stir well to coat in the tomato-onion base.
- Add salt and optional curry powder or chili. Stir and cover.
- Let it cook for 5–10 minutes, stirring occasionally, until the greens are tender but still vibrant.
- Remove from heat and serve warm.
Notes
– Do not overcook — you want the sukuma to retain some crunch and its bright green color.
– Add pre-cooked beef, minced meat, or eggs if desired for a more filling version.
