Quick Chicken Piccata Recipe
This Chicken Piccata recipe is definitely one for the books. It is easy to prepare and even easier to cook once you have the ingredients on hand. It makes for one of the easiest dinner meals on earth.
Ingredients
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 boneless skinless chicken breast halves
- 1/4 cup butter, cubed
- 1/4 cup white wine or chicken broth
- 1 tablespoon lemon juice
- Minced fresh parsley (optional)
Cooking Instructions
To make this dish, first mix the flour, salt, and pepper in a shallow bowl.
Take 4 chicken breasts and pound them with a meat mallet until they are 1.25cm thick. Dip the chicken in the flour mixture, making sure to coat both sides and shake off any excess.
In a large skillet, heat the butter over medium heat. (If you decide to use margarine instead, omit the salt in the recipe and only add to taste at the end)
Brown the chicken on both sides. Add the wine and bring it to a boil.
Reduce the heat and simmer uncovered until the chicken is no longer pink, which should take 12-15 minutes. Drizzle the chicken with the juice of one lemon. You can also sprinkle it with chopped parsley for extra flavor.
